How To Prepare Groundnut Soup

Groundnut soup is popular in the Southern and Northern parts of Nigeria. Ghanaians call it Nkatenkwan where it’s eaten with tilapia and Banku

The first day I heard about groundnut soup, it sounded strange. I could only imagine how it looked like. What came to my thought was groundnuts scattered all over a soup or something, lol! I was so eager to see how it looks and how it taste.

I had a good friend, she’s a caterer, she’s way older than me but whenever I have cooking issues, I go to her for guides.

I went to her on two consecutive days just to learn how to prepare this soup. Well, she gave me a helping hand. I watched her as she prepared this dish and that how I was able to pick.

The dishes came out absolutely delicious that I forget when I licked my five fingers. Believe me cooking is a great skill. Win your man or your woman with a good food.

Make him/her fall inlove with you over and over again not withstanding that you get to the heart of a man through his stomach.

Groundnut is not just delicious that is as well nutrious. The followings are how groundnut soup is benefit to the health

a. Great source of folate which helps promote fertility

b. High in monounsaturated and polyunsaturated fat that helps keep the heart healthy thereby reducing the risk of coronary heart diseases

c. Groundnuts contain a good amount of Folate which helps promote Fertility.

d. High in plant proteins. Which should be incorporated into the diets of protein deficient people , vegetarians and diet for children

Here is a guide on how to prepare Groundnut soup

Ingredients for Groundnut Soup

a. 500g raw peeled groundnuts (peanuts)

b. Assorted meat & fish (Beef,Shaki)

c. Dry fish or  Stock fish

d. Palm Oil

e. A small bunch of Pumpkin leaves

f. Spinach or Bitterleaf

g. 2 tablespoons ground crayfish

h. Knorr Soup seasoning

i. Salt (to taste) &

j. Ground dry pepper.

Directions for Groundnut Soup

a. Soak the stock and dry fish until soft then debone and break them into tiny pieces using your fingers and set aside

b. Roast the groundnuts in a pan, stirring constantly making sure it doesn’t get burnt till it turns golden brown then after this set aside to cool down then grind

c. Wash and sliced the pumpkin leaves into tiny pieces. If using spinach, do the same. if using bitter leaves, wash until its free from bitterness and set aside

d. Grind the pepper and crayfish

e. Cook your shaki until shaki starts to curl then adds the dry fish and stock fish. Cook until meat and fish is tender

f. Pick out the shaki and stock fish leaving the stock in the pot then add the grinded groundnut

g. Then add the groundnuts and stir till lumps dissolve. Then reduce heat to very low and start cooking

h. Stir from time to time and add water when necessary to avoid been burnt.

i. Cook till oil appears on the surface then add palm oil and stir

j. Add the beaf, fish , stir and cook on low heat

k. If you prefer vegetables then add your vegetable , stir and simmer and stir again

Method II

Ingredients for Groundnut Soup

a. 1 kg Beef

b. 500g Assorted meat (Shaki, kpomo, Intestine )

c. 1 medium sized dry Fish

d. ½ medium Sized onion – chopped

e. 3 tbsp. of grinded Crayfish

f. 4 plum tomatoes

g. 3 Red Scotch bonnet (Ata rodo)

h. 2 cups Roasted groundnuts

i. 1 medium size dry fish

j. 2 cooking spoon of palm oil/ vegetable oil

k. 1 tbsp. Dried pepper (Optional)

l. 2 Ehu seed (Calabash Nutmeg , iwo/erhe)

m. A handful of either washed bitter leaves, pumpkin leaves or scent leaves – chopped.

Directions for Groundnut Soup

a. Roast the calabash nutmeg also known as iwo/erhe over direct flame , remove the shell and pound .

b. Wash and boil the beef and assorted meat and place in a pot. Boil with the following ingredients crushed seasoning cubes, dried pepper and salt to taste use water just enough to cover the meat. Cook until meat is tender. 25mins is enough to get such result.

c. Soak dry fish in hot water, debone and add to the cooked meat. Allow to cook for 5 mins then set aside

d. Blend the roasted groundnut adding a small quantity of water into a smooth paste and set aside

e. Wash the tomatoes and pepper, removing the seed, blend into a smooth puree and set aside

f. Place another pot on heat to preheat, pour the oil into the pot, add the onion until its translucent then pour the groundnut paste into the pot. Allow to cook for 10 minutes

g. Add the tomatoes and pepper puree. Stir then add the meat stock

h. Add the crayfish and grinded iwo, stir and leave to cook for another 10 minutes

i. Add the finely chopped vegetable and allow to simmer for 3mins

j. Remove from heat and serve with your wonderfully made eba, fufu and pounded yam.
