How To Make Nigerian Jollof Rice

Jollof rice is a special Nigerian delicacy and it remains one of the most popular food consumed by many in the country.

It is loved by virtually every family in Nigeria and it the most commonly prepared meal served to guests in special occasions like weddings, Birthday parties, naming ceremony etc.

There are individuals that eat jollof rice at least three to four times per week. It is eaten alongside salad, beef, fish, goat meat, chicken or any other meat of interest.

How To Make Nigerian Jollof Rice

Jollof rice can be prepared in different ways, with groundnut or vegetable oil, with palm oil, with coconut oil etc, the main ingredients of a typical Nigerian jollof rice are; tomatoes, pepper, onions, seasoning cubes, salt, and any other spices of choice. Jollof rice is one food that is recognised both within the country and outside Nigeria.

Ingredients for making jollof rice for 7 servings

a. 7 cups of rice

b. A bowl of fresh tomatoes

c. Fresh red pepper to taste

d. 2 large onions

e. 7 Seasoning cubes

f. Salt to taste

g. Vegetable oil

h. 1 whole Chicken (you can use any other meat of your choice)

i. Keg of water

j. Spices (curry, thyme)

k. Pot and spoons

Procedure for making the jollof rice:

1. Place a clean medium sized pot on the fire and pour water half-filled into it, cover the pot and allow the water to boil.

2. When the water is close to boiling, begin washing of the rice with cold water then transfer the rice into the boiling water on the fire.

3. While the rice is on the fire, mash or grind the tomatoes and pepper then slice the onions and set aside.

4. Wash the diced chicken with clean water properly, add 4 seasoning cubes and salt to taste, little thyme and curry powder and allow to cook in a separate pot for about 10 minutes.

5. When the chicken is done, fry or oven dry the chicken, pour the stock of the chicken into a clean bowl and set aside.

6. Parboil the rice using a sieve 10 minutes after the rice has been put on the fire, this helps to remove the excess starch. And set the pot aside.

7. Bring out a clean frying pan or reduce the oil from the pan that you initially used in frying the chicken and place on the fire, transfer the mashed ingredients into the oil on fire and allow to fry for about 3 minutes, using a serving spoon stir the tomatoes sauce frying on the pan to avoid it getting burnt or sticking to the pan, and at the same time put 3 seasoning cubes and a little salt to taste into the sauce on fire, add the chicken stock into the sauce stir, then set aside (reserve the remaining 1 seasoning cube for when you mix the parboiled rice with the tomatoes sauce)

8. Add a little of the curry powder and thyme into the tomatoes sauce on fire and stir with a spoon to allow it fry properly.

9. Place back the pot initially used in parboiling the rice, back into the fire and add little water into it and allow to boil before pouring the half-done rice back into the pot. (remember the tomatoes sauce containing the meat stock will still go into the rice so use little water as possible)

10. Transfer the sauce into the parboiled rice already poured into the pot on fire and mix properly to allow the ingredients semer into the rice, add the remaining seasoning cube of maggi and little salt to taste to the rice (if needed), close the pot and allow to cook for another 15 – 20 minutes.

11. Simultaneously add little water while the rice is cooking on the fire, if you notice the rice is still far from getting soft. Avoid pouring too much water at this stage into the rice to avoid the rice getting over cooked.

12. When the rice is done and the water is dried out of the rice, mix the rice rice well once more, you can now drop the pot from the fire.

Your jollof rice is ready to be served hot, alongside the fried chicken and any chilled drink of your choice.

Nigerian jollof rice can also be prepared locally with the following ingredients

a. Palm oil

b. Local Rice

c. Dried fish (smoked fish alternatively)

d. Cray fish

e. Tomatoes, pepper and onions

f. Locust bean (dawadawa in hausa)

g. Seasoning cubes and salt to taste

h. Spices (curry and thyme is optional)

i. Keg of water

Procedure

1. Wash the rice into a pot of boiling water already on the fire and allow to cook for about 10 minutes.

2. Cut the tomatoes, pepper and onions and set aside.

3. Wash the dried fish with hot water and little salt and set aside

4. Pound the cray fish and set aside

5. Pour red palm oil into a frying pan on fire and transfer the cut ingredients into the hot oil, add 2 to 3 table spoons of dawadawa into the sauce and allow to fry for few minutes, transfer the dried fish and cray fish into the sauce, add salt and maggi to taste and allow to cook for about 3 more minutes before putting the pan down.

6. Add little water into the sauce and allow to fry for few minutes before

7. Parboil the rice and set aside, pour a little water into the same pot and allow to boil then transfer the parboiled rice back into the water.

8. Transfer the sauce containing the dried fish into the parboiled rice on fire cover and allow to cook, add water little by little till water is no more needed in the rice

9. Mix the rice with the ingredients after some minutes, check if the water is dried out of the rice before putting the rice down.

Your jollof palm oil rice is ready to be served hot.

Typically in Nigeria many homes simultaneously cook rice using palm oil and vegetable oil and it’s all based on preference.

The two methods of cooking the jollof rice will result to different tastes but they individually taste delicious. Unlike the rice prepared with vegetable oil that is commonly served in occasions, the palm oil rice is mostly prepared in homes.

It is not a typical Nigerian culture to serve palm oil rice in special occasions unless based on request. The two types of jollof rice are sometimes spices up in different ways to the preference of different individuals in different homes, as some people add vegetables to their jollof rice to give it a different taste and appearance.

All the same jollof rice is a special Nigerian delicacy that is loved by many, as the saying goes; an occasion without jollof rice is incomplete.
